Why is it so good for us ?
This is a very quick, simple and delish brekkie that is also cheap and can be made ahead of time.
It is rich in fibre from apple, zucchini and oats and combines healthy good fats from seeds that support our energy, cognition, hormones. Fibre is important for regular bowel motions.
Its very satisfying and will keep blood sugar levels balanced which improves energy levels.
You can make a big batch of it and keep it in the refrigerator for 3 days too!
Ingredient Guide
– 1/2 of a grated zucchini
– 1/2 a grated apple
– 3 tbs rolled oats
– 3 tbs seeds (hemp seeds, chia seeds)
– 1 tbs coconut flakes/ shredded
– 1 tbsground flaxseed (great for oestrogen metabolism- hormone health)
– 1/2- 1 cup milk of choice or water
OPTIONAL EXTRAS
– dollop of coconut yoghurt or kefir
– goji berries
– 1 tsp cinnamon
Method:
Mix all ingredients well, cover and place in fridge overnight. Top with coconut, berries or other fruit or chopped nuts in the morning.
*To make gluten free, simply omit the oats or use GF-free oats
